A Classic Cheese and Onion Flan

Instructions

Preheat oven to 400 F (204 C).

Combine flour, butter (or butter/lard mix), and salt in a bowl, then rub until sandy.

Gradually add water to form a soft dough.

Form dough into a disc, wrap, and chill for 30 minutes.

Melt butter and oil in a saucepan, sauté sliced onion until softened, then cool.

Roll pastry to 5 mm thickness and line a greased 10-inch tart tin; chill while finishing filling.

Whisk eggs in a jug, then add cooled onion, grated cheese, parsley, milk, salt, and pepper; stir to combine.

Remove pastry case from refrigerator, place in oven, and pour egg-cheese mixture two-thirds full.

Bake for 25 to 40 minutes until golden brown and set but not completely solid in the center.

Remove from oven and rest 5 minutes before serving.
