Instructions

  1. Warm 2 cups of water to 110-115 F.

  2. In a medium bowl, dissolve 2 1/4 teaspoons active dry yeast in the warm water.

  3. Mix in 2 cups unbleached all-purpose flour until the mixture is smooth.

  4. Transfer the starter to a container at least four times its volume.

  5. Cover the container with a cloth secured by a rubber band.

  6. Let the starter rest in a warm area for five days, stirring once daily, then maintain by feeding.
