Instructions

  1. Heat milk in a small saucepan over medium-low heat until hot.

  2. In a separate saucepan, melt butter over low heat, then add flour and stir until smooth.

  3. Increase heat to medium-low, slowly whisk in the hot milk, and stir until the sauce thickens to a creamy consistency.

  4. Remove from heat, incorporate salt, pepper, and nutmeg, then gradually stir in egg yolks one at a time.

  5. Return to heat and whisk briskly until well blended.
