Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Butter a 1 to 1.5-quart baking dish.

  3. In a skillet, melt 1 tablespoon butter over medium-low heat and sauté the onion until translucent.

  4. Stir in cream of mushroom soup and processed cheese spread or cheddar, cooking until the sauce is smooth and cheese is melted.

  5. Combine hot cooked rice, cooked broccoli, cheese sauce, and black pepper in a large bowl, then stir.

  6. Spoon the mixture into the prepared baking dish.

  7. Bake for 20 to 25 minutes, until thoroughly heated and bubbly.

  8. Optionally, top with 1/2 cup shredded cheese, half the breadcrumbs, red bell pepper slices, and remaining breadcrumbs, then bake until cheese melts.
