7-UP Pound Cake
A moist and tangy pound cake features a distinctive lemon-lime flavor derived from incorporating lemon-lime soda into the batter.

Instructions

Preheat oven to 300°F and grease/flour a 10-12 cup tube or Bundt pan.

Cream butter, shortening, and sugar in a stand mixer on medium speed for 3-5 minutes until light and fluffy.

Beat in eggs one at a time, then add and beat in lemon extract.

On low speed, alternately add flour in three additions and lemon-lime soda in two additions, beginning and ending with flour.

Finish mixing batter by hand with a spatula until homogeneous.

Scrape batter into the prepared pan. Bake for 75-90 minutes, covering with foil if the top browns too quickly.

Cool in the pan for 30 minutes on a rack, then invert onto the rack to cool completely.

Dust with powdered sugar or prepare a lemon glaze, substituting 2 tablespoons of lemon-lime soda for lemon juice if desired.
