Instructions

  1. Preheat the oven to 350 F.

  2. Spread rice in a 2-quart baking dish.

  3. Layer corn over the rice, seasoning lightly with salt and pepper.

  4. Combine 1 can of tomato sauce with 1/2 cup water, then pour over the corn layer.

  5. Sprinkle with chopped onion and bell pepper.

  6. Spread ground beef over the vegetables, seasoning lightly with salt and pepper.

  7. Add the can of diced tomatoes.

  8. Arrange bacon strips on top.

  9. Cover with foil and bake for 1 hour.

  10. Remove foil and bake for 30 more minutes, until the bacon crisps.

  11. Optionally, add shredded cheese and bake until melted.
