Instructions

  1. Heat a nonstick pan over medium-low heat and melt butter.

  2. Crack and beat eggs in a bowl until pale yellow.

  3. Add milk, salt, and pepper to the eggs, then whisk vigorously to incorporate air.

  4. Pour eggs into the hot buttered pan; cook for 1 minute without stirring until the bottom sets.

  5. Push edges of the egg towards the center with a spatula, tilting the pan to allow uncooked egg to flow underneath, until no liquid remains.

  6. Ensure the egg pancake slides easily; loosen with a spatula if needed.

  7. Flip the omelet and cook for a few more seconds until no uncooked egg remains.

  8. Add desired fillings in a line across the center of the omelet.

  9. Fold one edge of the egg over the filling; cook for about one minute without browning. Optionally, flip to cook the top for 30 seconds.

  10. Transfer the omelet to a plate; garnish with herbs if desired.
