Instructions

  1. Preheat the oven to 450 F.

  2. Remove and chop mushroom stems.

  3. Cook sausage in a skillet over medium heat until done, then transfer to a bowl, reserving 1-2 tablespoons of drippings.

  4. Sauté chopped mushroom stems in reserved drippings for 5-10 minutes until tender.

  5. Combine cooked stems, sausage, breadcrumbs, and cheese thoroughly in the bowl.

  6. Fill mushroom caps with the prepared mixture.

  7. Bake for 15 minutes.

  8. Optionally, top with additional mozzarella and bake until melted.
