4-Ingredient Boiled Frosting

A fluffy white boiled frosting that sets well even in heat is made simply with just four ingredients.

Instructions

  1. Start boiling 1 1/2 cups granulated sugar, 1/2 teaspoon light corn syrup, and 2/3 cup water in a saucepan, stirring only until the sugar dissolves.

  2. Place 2 large egg whites in an electric mixer bowl.

  3. Continue boiling the syrup rapidly, without stirring, until it reaches 240 F (soft-ball stage).

  4. Slowly stream the hot syrup over the egg whites while beating constantly.

  5. Add 1 teaspoon pure vanilla extract.

  6. Beat for 10 to 15 minutes until the frosting is cool and spreadable, switching to a wooden spoon if it becomes too stiff.
