30 Minute Mexican Enchiladas

Instructions

  1. Preheat the oven to 400 F.

  2. Heat 1 cup of oil in a medium saucepan until hot but not sizzling.

  3. Dip each tortilla into the hot oil until pliable, then drain briefly on a paper towel.

  4. Coat the bottom of a 13x9-inch baking dish with sauce.

  5. Dip a warmed tortilla into the sauce, then place it in the baking dish.

  6. Place slightly less than 1/4 cup of cheese down the center (adjust if adding meat), then fold and roll the tortilla, placing it seam-side down.

  7. Repeat for all tortillas, layering them as needed, then pour any remaining sauce over them and sprinkle with cotija cheese.

  8. Bake for 20 to 30 minutes, or until hot throughout and the cheese is melted.

  9. Serve immediately.
