Instructions

  1. Sauté bell peppers and onion in olive oil over medium-high heat in a large skillet.

  2. Stir in garlic salt, curry powder, chili powder, and cayenne pepper, cooking until the vegetables are tender, about 5 to 7 minutes.

  3. Warm flour tortillas briefly.

  4. Fill 4 warmed tortillas with the pepper mixture, adding salsa and nondairy sour cream if desired, then serve immediately.
