10-Minute Tofu Enchiladas Recipe

Instructions

  1. Preheat the oven to 350 F.

  2. Crumble and sauté tofu in olive oil with taco seasoning or chili powder until golden brown.

  3. In a large bowl, combine the sautéed tofu with 1/2 cup enchilada sauce and half of the cheese.

  4. Spread 1/4 cup enchilada sauce in the bottom of a baking pan.

  5. Fill each flour tortilla with the tofu mixture, roll, and arrange them in the baking dish.

  6. Pour the remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.

  7. Bake for 20 to 25 minutes, or until done.
